Ortiz started out his life in fighting in High School where he earned fourth place in the state high school wrestling championships his senior year. His wrestling accolades only accumulated from there, with a state junior college championship title and a stint at Cal State Bakersfield. Following that, he trained with Stephen Neal, future world and NCAA champion.

He fights with the UFC for Team Punishment. He's fought in at least 20 UFC bouts in his career, starting with one win and one loss, both in UFC 13 on May 30, 1997. The win was against Wes Albritton with a referee stoppage in the first round, the loss coming in the subsequent round, against Guy Mezger. He avenged that loss, though, two fights later, with a TKO against Mezger at UFC 19 after a previous TKO at UFC 18 against Jerry Bohlander.

Among his most noteworthy victories are those against Wanderlei Silva, Evan Tanner, Patrick Cote, Forrest Griffin, and three times against Ken Shamrock. A true celebrity, not just in the world of Mixed Martial Arts but in the mainstream as well, Ortiz has appeared on the cover of numerous magazines and was the hottest pay per view ticket seller of 2006.

As of this writing his overall MMA record is 16-5-1. Ortiz also had a brief stint as a contender on Donald Trump's Celebrity Apprentice.
